Chicken Croquettes

Ingredients:

3/4 cooked chicked meat (approx. 1 cup)
1/2 small onion, peeled and minced
3 hard cooked eggs, peeled and minced
9-10 saltine crackers, crushed to make crumbs
1/2 tsp celery seed
1/2 tsp salt
1/2 tsp pepper
1/2 to 1 cup chicken broth
8-10 whole cloves
2 eggs beaten
Directions:
  1. Using meat grinder or two knives chop chicken finely.

  2. In bowl, combine chicken, onion, eggs, and cracker crumbs.

  3. Add celery seeds, cloves, salt, and pepper.

  4. Stir in just enough chicken broth to hold mixture together(If mixture gets too wet it won't hold together).

  5. Form into 8 to 10 two-inch haystacks, logs or patties.

  6. Insert clove in top of each - if desired.

  7. Dip croquettes into beaten eggs and roll in cracker crumbs.

  8. In deep, heavy skillet or deep-fat fryer, heat enough oil for deep-fat frying to 375 degrees.

  9. Fry croquettes, a few at a time, until golden.

  10. Drain on paper towels and serve hot.
