Ingredients:

4 potatoes, medium, peeled 
Water 
1 tsp.  salt 
2 Tbsp   butter
1/2 cup milk
1/4 tsp.  ground white pepper
1 egg yolk
1 Tbsp   parsley
1/2 lbs.  cheddar cheeses, sharp, cut in 1-inch squares 
1/2 cup  butter, melted 
1 cup   bread crumbs; or 
1 cup  cornflakes, finely chopped 
Directions:
  1. Cook's notes: It is important that the mashed potato mixture be stiff enough to hold its shape around the cheese, therefore when you are adding the milk do so a little at a time until the proper consistency is reached.

  2. Cut potato in halves or quarters if large. Place potatoes in saucepan, cover with water and add 1 tsp. salt.

  3. Bring to a boil, reduce heat, cover, and cook until tender but not mushy.

  4. Drain and mash with 2 Tbsp. butter, half the milk, pepper, salt to taste, egg yolk and parsley.

  5. Add all or some of the remaining milk only if necessary. (Potatoes should be stiff) Cool thoroughly.

  6. Place the 1/2 cup melted butter and bread crumbs or cornflakes in separate bowls. Set aside.

  7. Shape some cooled potato mixture around each piece of cheese forming a ball that completely encases the cheese.

  8. Coat balls, first in melted butter then in dry ingredients.

  9. Place balls in muffin pans and bake about 15 minutes or until golden brown.

  10. Remove and sprinkle with paprika.

  11. Balls should be brown and crusty on the outside and cheese soft and melted.
